Yoghurt powder is made of liquid yoghurt, lactic cultures, milk protein, and soluble bifidogenic fibers.

Yoghurt is made by coagulating milk and then pasteurizing it at a high temperature for an extended period of time. Fermentation takes place at a warm temperature, which is regulated to the ideal temperature for the yoghurt cultures used. Fruits and flavourings are added to yoghurt before it is packaged to reduce the likelihood of it separating during storage. Stabilizers are administered after the composition of the solid is modified, and the milk is pasteurized for a better texture and shelf life.

Additional Information

The yoghurt powder is inoculated and fermented to obtain a smoother and creamier finished product. Homogenization is a technique used in industrial yoghurt production to ensure that the quality is homogeneous and may not disperse.
