The cocoa alkalization process begins with grinding the cocoa nibs in a drum reaction vessel or in a screw conveyor. The mixture of nibs and an alkaline solution, which is then heated. By heating a combination for an extended period of time, a specific colour can be created. The mixture is dried and roasted at a temperature below 100 °C after the heating stage. Furthermore, alkalized cocoa powder can decrease the acidity of natural cocoa from pH 5.2-5.6 to pH 6.8-7.5, which is virtually neutral. |
