Granulated instant coffee or coffee granules are terms for agglomerated coffee powder. It’s marketed as a high-end beverage. Agglomerated coffee is a cross between spray-dried and freeze-dried coffee, and it contains volatile particles that quickly shatter. It’s manufactured by forcing particles to join together in a series of stages that result in granules.

The procedure of making agglomerated instant coffee is quite similar to that of making spray-dried instant coffee, which involves multiple steps such as milling spray-dried instant coffee to make a mild powder. The powder’s cohesiveness is then modified to allow it to flow and bind together with only minor compaction. After the correction, it will develop a design with no structural flaws. Spray-dried coffee is combined with water and steam to generate agglomerated particles, which are then used to make agglomerated coffee.

The agglomerated coffee powder is efficiently produced by spraying a minimal volume of a highly concentrated solution of coffee solubles in water over a gently agitated bed of particles.
It has been discovered that using this agglomerating fluid improves the flavour of the finished product since the flavour-rich distillate is given straight to the instant coffee instead of being dried, which loses some of the volatile flavours.
