Skim milk powder is a pasteurized milk product that has part of the fat and water removed. The fat and protein content of the milk could be changed merely to meet the compositional parameters below by enhancing or eliminating the milk constituents and thus, the whey protein to casein proportion of the milk being adjusted was not affected.

Prior to evaporation, skim milk is heated to differentiate the skim milk powder process from the whole milk and buttermilk powder processes. The step starts with the preparation of liquid milk, which is then fed through an evaporator to produce a pre-concentrate. The pre-concentrate is next evaporated to provide a concentrate with at least 50% total solids content, which is then spray dried to make a fat-containing milk powder.

Skim milk powder is considered a low-cost form of non – fat dairy solids. It's a great source of dairy solids. It can be used in food to increase the efficacy of water binding and improve sensory attributes. It's also a better weight-loss alternative than other milk powders because it contains similar nutrients as other powder kinds of milk.
